I hadn't made an Asian dish in a while, and I had been meaning to make this forever! I used to always use a box mix which tastes pretty good, but nothing compares to homemade mabo tofu! It's super easy too :-)
Ingredients:
- one box of Medium Firm Tofu (cut into pieces)
- half pound of ground pork
- scallions (I left these out because Gary doesn't like them)
- 1 tsp minced garlic
- 1 tsp minced ginger
- 1 tbs sesame oil
- mixture of 1 tbs potato starch (片栗粉) & 2 tbs water (make sure you mix before hand so it does not clump!)
- soy sauce 2 tbs
- 1 tbs tobanjan (豆板醤) [available at Tensuke in a small can]
- 1 tbs tenmenjan (甜麺醤) [also available at Tensuke in a tube]
- 1 cup water
- 2 tsp chicken broth
- 1 tbs cooking wine
- 1 tsp sugar
Instructions:
1. Heat pan on high, pour in sesame oil, garlic, and ginger (make sure you stir it around so it doesn't burn)
2. Add tobanjan and continue to stir
3. Add pork and cooking wine
4. After the pork is fully cooked, add tenmenjan and dash salt and pepper
5. Add in soy sauce, water, chicken broth, and sugar
6. After it comes to a boil, lower heat and add tofu and heat about 3 minutes
7. If you put in scallions, add scallions and cook for another 3 minutes
8. Add in the mixture of potato starch and water, stir, and you are done!
Serve over rice :-)
*If you like spicy, you can add more tobanjan. If you don't like spicy, add in less!
