Cafe Rio Sweet Pork Salad

So Gary and I have been wanting to do this one for a while. Ever since visiting Utah and experiencing Cafe Rio, I can't stop thinking about it!!! This online recipe we found pretty much nailed it. We can't remember if the black beans are right, but I think that if you want, you can just boil and salt and pepper the black beans and call it good. It will be one less thing to prepare which is nice because this meal takes a lot of prep.

For my friends who have never experienced Cafe Rio but love Mexican food, you have to try this out!!! It is DEEEEELISH :-)
