Chicken quesadillas with spicy bean sauce

I forgot to post this one, and I don't have the pic on me at the moment, but it was delish!!!

Spicy Bean Sauce Ingredients
3 tablespoons of sliced pickled jalapenos
1 can black beans
1 can diced tomatoes
2 teaspoons ground cumin
1 tablespoon chopped garlic (about 2 cloves)
Salt & pepper to taste

Quesadilla Ingredients
Flour tortillas (8 inch)
Chicken breast (however much you want to put in)
Cheese

Quesadilla Instructions
Cut the chicken into chunks as big as you want to put in your quesadillas. Once they are cooked, lay tortillas flat on a dry surface, add some cheese, add the chicken, cover with cheese and fold and form a 1/2 moon.

We used a George Forman to cook it, but you can also cook it on a pan until the cheese melts.

While you are cooking the quesadillas, make the sauce!

Spicy Bean Sauce Instructions
In a sauce pot add the black beans after you drain the juice, and all other ingredients (for tomatoes, add it with the juice). Bring to a boil then let it simmer for about 3 to 5 minutes.

Pour the sauce into a blender and process until smooth. Serve over the quesadillas while it's hot.
